Winter Warmers

I dont know about you guys out there but I'm starting to struggle with food and the cold weather, It was never an issue before as I guess I had a little more insulation and a lot more 'stodge' but now the temptation to binge is high!

However it will not happen and at the weekend I armed myself with numerous vegetables and made some homemade soup. Nothing warms your inside more - or fills you up as much!

My soup contained:
Potatoes
Sweet Potatoes
Onions
Carrots
Leeks
Vegetable/Chicken stock
Garlic

Sometimes if I don't have enough veg to hand I add brocolli and cauliflower from the freezer.

So put the stock in with the water, let it boil while your chopping up your veg, throw it all in and let it cook for about 30 minutes. You cant go wrong!
I used to eat mine as is, but this time I liquidized it and it tasted even better - and for some reason it felt more substantial!!

I also struggled first thing in the morning due to being cold and sleepy and I've swapped my fruit for porridge(sometimes the fuit goes in the porridge! for work, I buy those handy pots that you just add hot water too and they keep me going until lunchtime.

So even though it cold outside and we feel like we need to insulate - don't eat the fat stuff - just head for the good heartwarming healthy stuff - and wear a jumper! :-)

If I don't get on here before I hope you have a Fantastic Christmas and a Healthy New Year. Do over indulge but enjoy it!
